🎃 Spooktacular Organic Pumpkin Pie
Nothing says Halloween comfort quite like the sweet, spiced aroma of freshly baked pumpkin pie. This classic autumn favourite is rich, creamy and filled with warming flavours — perfect for rounding off a bonfire night feast or Halloween dinner. Using organic ingredients makes all the difference, giving the filling a naturally sweet depth and the pastry that perfect buttery crumble.

🥧 Ingredients
For the Pastry:

250g organic plain flour

125g organic unsalted butter, chilled and cubed

1 tbsp organic caster sugar

1 organic egg yolk

2–3 tbsp cold water
For the Filling:

500g organic pumpkin, peeled and cubed (or use organic tinned pumpkin purée)

125g organic brown sugar
-
2 organic eggs
-
1 tsp organic ground cinnamon
-
½ tsp organic ground nutmeg
-
½ tsp organic ground ginger
-
200ml organic double cream
-
1 tsp organic vanilla extract
👩🍳 Method
1. Prepare the Pumpkin
If using fresh pumpkin, preheat the oven to 180°C (fan 160°C). Spread the pumpkin cubes on a baking tray and roast for 25–30 minutes, or until soft. Let cool slightly, then blend into a smooth purée.
2. Make the Pastry

In a bowl, rub the flour and butter together until the mixture resembles breadcrumbs.

Add the sugar and egg yolk, then slowly add water a tablespoon at a time until the dough just comes together.

Shape into a disc, wrap in parchment, and chill for 30 minutes.
3. Blind Bake the Crust

Roll the pastry out and line a 23cm pie tin. Trim edges and prick the base with a fork.

Line with baking parchment and fill with baking beans.

Bake for 15 minutes, remove the parchment and beans, then bake for another 10 minutes until golden.
4. Prepare the Filling

In a large bowl, whisk together the pumpkin purée, sugar, eggs, cream, vanilla, and spices until smooth and creamy.
5. Bake the Pie

Pour the filling into the baked pastry case and smooth the top.

Bake for 40–45 minutes, or until the centre is just set but still slightly wobbly.

Allow to cool completely before serving.
🕯️ To Serve
Dust with a little organic icing sugar, or decorate with toasted pumpkin seeds for a rustic finish. Serve with a dollop of organic clotted cream or a drizzle of maple syrup for a decadent Halloween treat.
