How to Cook Your Organic Extra Large Beef Roasting Joint

🧑🍳 Preparation

  1. Bring to room temperature
    Remove the beef from the fridge 1–2 hours before cooking. This ensures even cooking.

  2. Season generously
    Rub all over with sea salt, cracked black pepper, and optional fresh herbs like rosemary or thyme.
    Optional: rub lightly with olive oil or mustard for extra crust flavour.

  3. Prepare the roasting tray
    Place the beef on a rack in a roasting tray. This allows heat to circulate and drippings to collect for gravy.

Oven Temperature

  • Fan 160°C / Conventional 180°C / Gas 4

Tip: Start checking internal temperature 15–20 minutes before the lower end of the time range.


Resting

  • Remove the joint from the oven when the thermometer reaches your desired doneness.

  • Loosely cover with foil and rest for 20–30 minutes.

  • Resting allows juices to redistribute, giving tender, juicy slices.
