Bring to room temperature
Remove the beef from the fridge 1–2 hours before cooking. This ensures even cooking. -
Season generously
Rub all over with sea salt, cracked black pepper, and optional fresh herbs like rosemary or thyme.
Optional: rub lightly with olive oil or mustard for extra crust flavour. -
Prepare the roasting tray
Place the beef on a rack in a roasting tray. This allows heat to circulate and drippings to collect for gravy.
