WHO ARE THE ORGANIC BUTCHERY?

Starting life as an organic farm in the heart of the West Country, The Organic Butchery is proudly founded on a long history of organic principles. We source the best quality organic grass-fed and wild meats, sustainable fish and organic free-range poultry from trusted local suppliers and like-minded brands to guarantee the highest standards of animal welfare and environmental stewardship. Our mission is to approach butchery with a whole-carcass perspective, to make the most of every animal that crosses our blocks, which means we offer you cuts that you will never see on the supermarket shelves.

WHAT IS ORGANIC BONE & BROTH

We make use of every part of the carcass - right down to the bones. They are an amazing resource, packed full of vitamins, collagen and health-giving fats. Our broth is expertly made by the Borough Broth Co. using organic ingredients and their own special technique to extract the best flavour from British carcasses.

Ingredients

Method

  1. Preheat the oven to 200°C/gas mark 6
  2. Into a large roasting tray drizzle the olive oil, add the beef stock bones, beef marrow bones and the chopped vegetables. Season with the coarse pink Himalayan salt and black peppercorns and roast for 20 minutes, until the marrow bones turn a golden brown colour and the marrow starts to melt
  3. Then transfer to a large lidded casserole dish, cover everything with the water, add the bay leaves and sprig of thyme and put into a very low oven overnight. To make sure the water doesn't evaporate, seal the lid of the pot with foil
  4. When the cooking time is up, skim and strain the broth, discard the veg and bones and you'll be left with a deeply flavoured broth for use as a base in soups, casseroles or risottos

Frequently asked questions

  • Bone broth does not have to be organic but at Coombe Farm Organic we only sell organic produce and are proud to stock Borough Broth Co organic bone broth, which is made from animals reared in an organic system that's approved by the Soil Association. Alternatively, we stock our own organic bones which can used to make bone broth, these bones are from animals who were on a diet of grass - and were not fattened up on grain-based concentrates. This means they grew slowly to maturity, building lean muscles and strong skeletons. As we don't administer drugs routinely - only on veterinary advice - and we double recommended withdrawal times, you can be assured that our organic bones are clean, untainted and natural.

  • There is some evidence to suggest anti-inflammatory qualities of chicken broth for sinus and respiratory infections, as well as some evidence to suggest bone broth also helps the lining of the gut, aid joints, muscles and bones as well as overall skin, hair and nail health due to the collagen within. Bone broth is a healthy addition to a balanced diet - research indicates that it’s the protein in broth that’s the main advantage to our health. This protein is broken down into collagen which promotes elasticity for firm smooth skin and glycine and glutamine which both promote a healthy immune system and gut lining. Adding vegetables towards to the end of the cooking time is a great way to increase its minerals and vitamin content.

  • Organic bone broth is made by simmering the bones and connective tissue of organic animals, the broth can then be drank from a mug on its own or used to make soups, sauces or gravies. Whilst drinking bone broth has become popular as a health hack in recent times, the use of broth actually dates back to prehistoric times, when hunter-gatherers turned otherwise inedible animal parts like bones, hooves and knuckles into a broth they could drink. At Coombe Farm Organic we're proud to sell Borough Broth Co bone broths. Slow cooked to a secret recipe using organic bones, pure spring water, Organic Apple Cider Vinegar and plenty of care and attention, these broths taste deeply delicious and are a great way to keep your gut happy.

  • Bone broth diets have become popular in recent years, there are many versions out there but essentially, they work by replacing meals with cups of bone broth. This replacement of meals reduces calorie intake, which is what you need to achieve weight loss, otherwise known as a calorie deficit = A calorie deficit occurs when you consume fewer calories than your body expends. We at Coombe Farm Organic do not encourage a diet where you sustain yourself purely on drinking broth and instead encourage a well-balanced diet and suggest seeking medical advice before taking on any new diet.
