Pheasant, the unsung hero of the British countryside crockpots! Free-ranging outdoors for their entire life, pheasants (like all game) are naturally lean. The trick to cooking a pheasant is to do so at a much lower heat, but for a longer amount of time. Slow cooking this way will prevent the pheasant from drying out. You could also coat it in butter or olive oil to keep it moist.
